About -
Like most flatfish, lemon sole ( Microstomus kitt) has a rather unusual look: a right - eyed fish with a small head and mouth, and smooth, slimy skin with a pearlescent shine. They are usually shades of reddish brown, with a tinge of pink and orange, pink and green flecks and a white underside.

Texture -
The lemon sole has a very delicate and tender meat with a lot of texture. It can be easily baked, steamed and grilled. Like other flatfish, the lemon sole is very lean, so one must be careful not to overcook it. To avoid this, breading and brining techniques can be used.

Bones -
All flat fish are very similar when it comes to bones. They have a small but flat set of bones that run through out the fish, they can be easily removed when filleted, normally leaving behind little to no bone.

Taste -
Lemon sole is a misnomer since it's neither a real sole, nor does it taste of lemon. It's actually a flounder (the family that includes plaice and turbot). It has delicate, sweet white flesh and is best cooked simply, either grilled or fried, and served with a light sauce.
